How do you change the name of column heading letters (A B C)in excel?

You can change them to numbers (1,2,3..., 256)
tools|options|general tab|check r1c1 reference style.

You can hide them completely
tools|options|view tab|Uncheck row and column headers

But that's about it.

I just type what I want to see in row 1 and then select A2 and do
window|freeze panes

Then my titles are always visible.

You can't. That is the default way of naming cells it ALL spreadsheets.
