Expanded email address names displayed

Just loaded up 2003 and clicked on a format item I can not reverse or find how to reverse.
When I send an email the recipient's name and email address is dispalyed. This is very annoybing when an emial goes out to 10 people and the header is huge. How does this setting get reversed.

You can't change how that works. BTW - it's only "huge" on your end - what
the recipient sees is very dependant on the mail client they use.
