Exporting Contacts to Excel

I'm exporting some of the contacts in my list to an Excel file, and I want to
map my fields, BUT I want to include my own created custom fields in the map,
that I placed in the user definded fields folder. I don't see an option to
amend the standard list that has been provided to me. How do I that? Thanks!

Short answer: you can't - the Outlook import/export wizard does not support
custom fields (either created for the folder or created as part of a custom
form).

You may find one of these two options of interest (there are some others):

#1) This free utility should solve your problem especially if this is either
a one-time or casual requirement (product not related to us - provided for

What about in Outlook 2007? Can I export my own created custom fields there?
Also, can you tell me what the User 1, 2, 3, 4, & 5 fields are for in the
standard list? I am not able to find them in my field choser menu. Can I name
those fields? Are they located anywere else besides the custom map fields
section? Is there a way to work around getting the information I have in my
custom fields exported to my file using those User 1-5 fields? What is a CSV
file? Thanks!

In answer to your questions:

#1 - Custom fields can't be imported to/exported from in any version of
Outlook
#2 - User fields 1-4 (no 5) are just 4 fields in the "standard" Outlook
field list that you can use for whatever you wish (no - you cannot rename
these fields)
#3 - Look under "All Contact Fields" in field chooser for User 1-4
#4 - Since you have your data in your custom fields - you'd have to move the
data to User 1-4 fields to export the data (why would you want to when at
the very least the solution from CodeTwo is free and would accomplish what
you need (failing that, ContactGenie Exporter provides a solution with more
features - albeit - not free)
#5 - CSV = Comma Separated Value text file (just one of many formatted text
fields and one of the most commonly used for importing/exporting data). Just
open the CSV file in Excel and save it as an Excel worksheet which provides
a cleaner worksheet than exporting directly to Excel.
