How can I expose my forms on the Internet for query by our clients?

(1) Can they fill out?

(2) If they can't fill out, can they at least query the form to see status
updates?

(3) Where do I start from here - I am NEW to InfoPath 2003, and since beta
is still BETA I prefer not to work with it until final release - I am a
business owner and do not have time to deal with bugs - would like to work
with something already functional and fully tested - 2003.

What you really need is a server that will serve-up InfoPath forms.
InfoPath 2007 includes InfoPath Forms Services which does just that. Using
Forms Services, you can publish forms to a SharePoint site so people can
fill them out in a web browser.

In 2003, the best you can do is export the form to MHT and host it on a web
server somewhere. However, in that case, the form will be read-only.
