Fields to insert text

I'm trying to create a field in Word where when I click on the field it highlights and I can enter the relevant text without it affecting the format of the document.

I have seen documents containing this type of field where I can also click on a box and the field containing the box fills with an 'X'.

Yeah--the keyword you need is "forms"--Word has 80 million types of
fields, and form fields are just a small subset. I think the tutorial
here, while written for WinWord, will work for MacWord:
