Does anyone know how to make a link or shortcut to a MS
document (in this case, Excel file) in a recurring
calendar or task, such that the file you open and save
after making changes from within the calendar or task item
is always the same one? I find it creating new copies of
the document every time I open it, in the temporary
internet files folder.

In the Insert | File dialog, use the Insert As button in the lower right
corner of the dialog to insert as a shortcut or link.
