I have an application for employment (a word documant) How do I fill it out
without changing it and then e-mail it?

What do you mean by "fill it out without changing it"? Filling it out
will change it.
I suspect you mean the form was poorly designed and you are unable to
type on the 'lines' without modifying the document? If that's the case
then all you can do is redesign it so it you can actually type on the
lines or fill it out by hand or a typewriter.
You may also want to point the creator of the application to this
article or use it to correct the issue in the form:

btw, if the job involves using Word then creating a correct
'fill-in-the-blanks' form for them may help you out. ;-)
