filtering out certain projects from Timesheets and Tasks Updates

Is there a way to filter out some projects (and their tasks) from peoples
Timesheets and Task Updates pages? I still would like to use enterprise
resources to assign to tasks for availability and planning purposes but I do
not want people to post actuals against certain workplans. Is it possible?
