Filtering views by category

In Contacts I'm trying to create views of contacts in specific categories.
However, for contacts that belong in multiple categories, all of the
categories show, even the ones excluded by the filter. Is there a way to
exclude these duplicates/unrequested categories.

A view grouped by category will show all the categories applied to all the items that meet the current filter restrictions. In other words, if you have a filter for items with the Important category and an item has both Important and Hot as categories, it will show under groups for Important and Hot. That's simply the way grouping works.

If you are filtering for only a single category, there's no need to use a grouped view.
