If you use Find and replace and try to replace a character in the document
with this « word then replaces the character with "

The character produced when you press the " key depends on the language at
the insertion point. If it is French, you'll get guillemets instead of
English quotation marks. These are produced by AutoFormat As You Type. It
would appear that Word is trying to be helpful by converting your guillemets
to the style of quotation mark that is appropriate for the language of your
text.

Sorry I dont think you understand me

I am using find and replace. The language is set to UK english which is
correct.

The keyboard works fine, including "

I am replacing characters in a document (ctrl + H) with this one « and
getting quotes instead

Yes. We understand what you're doing. But, when you use Find and Replace to
replace something it regards as quotes, Word automatically converts the
result into a smart quote. Word is being too helpful, and is guessing that
you really want a directional quote instead of «. If you choose Tools -
AutoCorrect Options - AutoFormat as You Type and uncheck the Replace
straight quotes with smart quotes, then repeat the Find/Replace option, you
should now find that Word correctly replaces with « instead of the
directional/smart quote.
