Finder's Date Modified updated when document is opened

eMac, 10.5.3, Office 2008 12.1.0

I've got a problem that I've seen off and on with various versions of OS
and Office where simply opening a document, usually Word updates the
Finder's Date Modified information.

I can't reproduce it 100% of the time, but it happens often enough
(90+%).

The files are both local and on Mac OS X Server shares accessed through
the local network.

The server is Mac OS X Server 10.5.3.

I've also seen the issue with 10.3.x-10.4.x clients and servers.

Does anyone have any pointers on how to fix the problem?

Previously, the problem seemed to have gone away without doing anything,
but this time it is persisting.
