Font sizes - limited in ENT 04 prefs but not in messages?

I¹m trying to adjust the font size in my default message preferences.
However, the HTML font size menu in the preferences panel is limited (e.g.,
includes option for 10 pt and 12 pt but not 11 pt). Unfortunately, 11 pt is
what I need (10 being too small, 12 being too large, 11 being just
right...thank you, Goldilocks). I can manually set this for individual
messages in the message format menu, which runs the gamut from 8 pt to 72
pt.

Is there anyway to get around the limited preference menu options and set
the default font size to 11 pt in all new HTML-formatted messages that I
create?

No. Be thankful that as many sizes exist as are offered: in Entourage X pre
10.1.4 there were only 5 sizes and many of them weren't honored by the
recipient mail clients.

You ought to be aware that when you send HTML messages, about 80% or so of
the people receiving your messages are going to see them at different
absolute sizes on screen, in spite of the fact that Entourage now specifies
the number of pixels to it works pretty well to Windows PCs with their
different screen resolutions form Macs. Nevertheless, people are on many.
many different screen sizes nowadays, and different screen resolutions. I
have a very large screen - 23". It has a very fin resolution - 1920 X 1200.
Thus font sizes look much smaller than on a 12" iBook with 1024 x 768
resolution. When people send me HTML messages in 10 pt. that I'm sure look
fine o their computer, it's too small to read comfortably and I always have
to click the Enlarge Font Size button ("A") - then it approaches what 12 pt.

So all this effort you're going to to try to find the "perfect" size is
pointless: maybe only 10-20% of recipients will be seeing it at the same
resolution as you anyway. You either have to trust that they'll cope by
adjusting the size if necessary. Or forget all this and send plain text -
that will always be read at the size most comfortable to the user. If you
stick with HTML for your own benefit (or in plain text too), if 10 pts is
too small and 12 too large in the font you're using, choose a different font
for goodness sake. All fonts vary in size - you'll find a few dozen that are
just the right size for you in one point size or another.
