When I save the data from a form to a text file, the numerical data is saved
as text (that is, with double quotes around it), even if I have set the text
field the data comes from to number format. Is there a way to change this?
Otherwise, I'll have to reformat all the numerical data once I import it
into Excel (as far as I understand, anyway).

No, there is not. Word treats *everything* as text, and does a VAL type of
conversion everytime it's supposed to calculate.

Depending on how you're going to import that data into Excel, you can probably
specify the data type during the import. (I know the UI over the DATA menu
lets you do that.)
