Format date as 'ddd' = "Mon"

Is it possible to format a date as "M" for monday?

I don't want to use a formula (Weekday, etc)

Yes, go to Format>Cell>Custom, and enter ddd in the box.

That formats as "Mon" which i have at the moment as per my heading - I need
to format as "M"

Sorry, I though you only didn't want to use weekday (instead of any formulae
at all).
