Format problems in Word

I know it will be simple, but it is driving me MAD..

Typical eg.

1: Open a new document, start typing..... Get my text on the page

2: Decide a Word or a Letter need to be Bold / Underlined/Italics etc
does not matter which

3: Select that word and apply the format

4: Now my whole document is Bold / Underlined/Italics ( going Mad)

5: Hit the undo and my document is now as I wished, with just that word in
the format needed.

6: Select another word or text and apply format.........

7: Back to the Un do option again..

Please, what is the setting / setup I need to make to STOP this.
