Formatting entire document, not selected text

I am trying to format individual words in Word (italisize, bold, unerline,
etc) and individual bullet points. But whatever I do to one word in the text,
the program does it to all words in the text. So trying to boldface one word
boldfaces all words in the entire doc. Any suggestions?
