formatting errors

Will someone please find out why WORD on my computer will
not format stuff the way it should?
Example: I am working on the Food Safety Manual for our
company website. It is 75 pages long. I have to make a
lot of changes to it, as the guys in charge see fit. Say
I have to go back and highlight ONE LINE OF TEXT. I
highlight that one line, click on bold, THE WHOLE DOCUMENT
CHANGES TO BOLD! I then have to click on UNDO, and then
it leaves just the one line that I wanted bold to start
with bold. I have to do and redo so many times in a day
that a lot of formatting get lost and messed up. Can
someone please help me? Our tech support here at work are
stumped as to why this is happening and have no clue where
to start.
