Formatting the view of mail I receive...?

I've just upgraded to MS Office 2007. I seem to recall in my older version of
Outlook(2002) that I could determine the way Outlook displays mail I receive.
I never used to receive so much mail in Plain text, now many of the note I
receive are in Plain text.

Can I change this?

Outlook's setting is for either displaying all messages in the formats they
were received, or displaying all in Plain Text. There's no middle ground.
Perhaps you're senders are simply using Plain Text or something between
Outlook and the server is converting the messages.
