Formatting

Using Visio2002, if there is a better and easier way to format a specific
shape (specifically for org chart, but may probably be applied to something
else) , where we can Fill the top text (employee name) say blue, and the
bottom text will be plain white. At the moment, I use a text block tool to
replicate this effect.

You could try a gradient fill pattern or create a custom fill pattern that
is half foreground and half background (no transition)
