The Options pull-down button in a New Message window gives the option to
display the From... field (and subsequently to change it if desired). Gaping
security issue.

Is there a way to prevent the display and/or modification of the From field
in e-mail messages.

Does an altered From field value show up in a log somewhere?

How is this a gaping security issue? In an Exchange environment you'll need
permissions to send as or on behalf of anyone else. For POP3 and IMAP you
can provide any address you want in your account settings. Even
(e-mail address removed). Don't expect to receive mail back from it though
:-D

This is the same for any mail client; it's just a limitation in the
protocol.

Not a security issue. It's a productivity issue. Many executives prefer
(or need) their assistants to be able to send messages on their behalf and
without the ability to change the From field that would not be possible.
