full date time stamp of a group of messages won't export

Hello,

When selecting folder of messages and then copying and pasting into Excel,
the Sent column of date information is randomly truncated. On some messages
I get the full date-time stamp, on others just the day of the week and others
just the date.

I am looking for a way to build a table of the date time stamps for a group
of messages. The owners of my company want to see a histogram of e-mail
volume for days of the week and also for time of day.

I would hate to make this a data entry project when I can see the daat I
need right in front of me.

Any suggestions?
