Full Screen Windows

Since reinstalling my O/S none of my windows open up full
screen, only about 3/4 with the last one opened and
maximized in the background. I don't want to view
multiple windows on the same screen and would prefer to
see each as a full screen. Can anyone remind me where the
option to change this is? Thanks!

Just click on the "full screen" icon in the upper right corner of the
window - it's the middle one of the three available, the one that looks
like a square. Normal behavior for most applications is that when you
maximize the application while in use, on relaunch that application will
remember that setting and come up maximized. Probably when you reinstalled
the OS, it lost those settings.
