Getting Full not Hidden Menus

I teach at a college and yesterday the tech support people tried
(unsuccessfully) to change my "profile" in Outlook. That's not the problem.
After using my computer, I found that in all the MS Office (2003 for Windows
XP) programs, my menus were truncated and I had to wait a moment or click on
a downward arrow at the bottom of the menu, in order to see the full menu.
I'm sure there is an easy way to change this, but I haven't been able to find
it. Can anyone tell me how to have the full menus appear automatically in MS
Office? I don't want the "hidden menu" option in any of my programs.
PS: The problem occurred because the College has recently changed over to
a MS Exchange Server and they were trying to update the profile that allowed
me to access my email through this server. The only obvious change I can see
is the menus, but is likely that they changed other functions without my
knowing? If so, do I just have to manually reconstruct my previous settings?

Hi Robert,

In Word 2003 check in Tools=>Customize=>Options
for menu display choices. These should 'stick' unless the Admin folks have set a policy that resets to their defaults each time the
app is started.

Hi Bob,
Thanks very much for your reply. That seems to have done the trick. I was
confused because I was expecting to find the means for making the change
under "Tools/options...."
