Giant gaps between lines in Outlook

When I create a new message I am getting giant gaps between lines when I
press the return button to start a new line. How can I adjust the amount
between lines.

Old messages appear to be OK

Also the font appears to change itself sometimes between mu typing a
message, save in draft and re-opening it, and also when I hit send - any
ideas ?

What version of Outlook? Are you using Word as your e-mail editor? If so,
it's likely Word's formatting is the culprit. Check Word's template. Older
version of Outlook used a template called "email.dot." Newer versions, I
believe, use normal.dot as the template. Look for line spacing as well as
points before and after paragraphs.
