If the data change, the chart will change. You can lock the chart one of
these ways, but it's irreversible:

Or are the labels not attached to the points? How did you apply the
labels? If you used regular text boxes, you have discovered that they
are not bound to a position in the chart. To use data labels on the
points to show different values than the options offered in the data
labels dialog, put your labels in another range, and use one of the
following addins to use this range to label the points:
