Is there an easy way to do the 11pm to 7 am shift

Hello,
Yes, it's easy : Tools / Change Working Time...
It is to be noted that a time slot can't over lap midnigth. So, even if you
have a continuous time slot from 11pm to 7am, You'll have to define 2 time
slots :

From : 00:00 To 07:00
From : 23:00 To 00:00

FYI - the working hours represent the hours during which work takes
place on a given calendar day and may or may not correspond to a
continuous shift. For graveyard, assuming no one comes to work on Sat
or Sun night, the hours for Mon will be only 11pm-12m, TWTF will be
000-0700 & 2300-0000, and Sat will be 000-0700 only. Don;t forget to
take meal breaks into account at well. If the people on the 2300-0700
shift get a 30 minute meal break, the shift represents a 7 1/2 hour work
shift, not an 8 hour one and failing to adjust for it will throw your
task durations, resource assignments, and costs off.
