Having a form submit by a user to an Excel?

I'd like to somehow automate how the data is received from the user.
Essentially the data will be used in form letters. So I was thinking to have
the data go into Excel and then from there into the form letter (merged).

Any way to automate having the data exported to Excel when it's either sent
by the user or received by the recepient? I've tried using a different view
but I'm not sure how to get that to work?
