Header Footer Field Codes

We cannot use the ampersand symbol in the header/footer as part of our company name because Excel sees this as an operator in a field code (I assume). Is there a way we can display the ampersand symbol (for example, enclose it in quotes or brackets) so that it will print in the header/footer?

Use two ampersands && to display a single ampersand in the header
or footer.
