Help: How to stop em dash replacing hyphen

If I type a hyphen in a text box it comes out as an em dash. How can I
prevent this and set it as default? (I don't want the hassle of insert
symbol)

Try looking under Tools > AutoCorrect Options > AutoFormat As You Type
