Hide Projects

Hi all,
My company has part-completed Projects which we wish to put "on-hold".
I don't want them to show under Server in the Project Centre. Also we don't
want to lose the hard work and progress done already, as we will come back -
so Delete is not an option.
I thought of "hiding" or "greying-out" but cannot find a mention of this
approach.
Is this possible; if so; how?
Or an alternative please

One approach is to add a custom field to all projects. Call it something like
"Project State" and base it on a value list (Active, On Hold, Archive, ...)

Then modify your project server view so it filters for only projects with
that custom field set to "Active". You can build other views to show those on
hold or other states. And probably one view which shows all projects.
