How can I acquire text doc, into Word-a scanner so It is editable

How can I acquire a text doc, into Word 2003 Pro and 2007 Pro, from a scanner
so It is editable in Word, intead of it being an image, and NON-Editable?

Specific steps are 60% required.
I have both 2003 and 2007 Office Pro installed, because I know 2003 better,
but am trying to learn to navigate in 2007.

Most scanners include some sort of optical character recognition (OCR)
software in the package. Scan the documents into your OCR program, and
then edit the results with Word.
