how can I add a field to the Map a custom field used in importing

I need to add a field I defined to the "Map custom fields" portion of
Outlooks Import/export function. Is this possible? How do you do it?

You can't. Also, Outlook doesn't support importing to custom fields or forms. You'd have to write custom code or use a third-party application. See http://www.outlookcode.com/d/customimport.htm.
