It depends on what type of patches you're referring to and if you're using a standalone or deploying a volume license keyed MS
Office 2007 product.
For volume licensed products you may be able to use the \Updates folder on the Office Network Installation Source Point or apply the
updates to the local installation source \MSOCache folder (Setup is run from that folder, not from the original files). Office 2007
uses Windows Installer patches (.MSP) files for customizations as well.
If you're deploying via Group Policy, .MSP files aren't supported directly.
