How can I hide things like paragraph marks?

The help says I can click Show/Hide in the paragraph group, but there is no
such thing shown in the paragraph group.

You mention Paragraph Group so I am going to guess that you have Word 2007.
(Please state your Word and OS version to help us help you.)

It is the top, right-hand tool in the group that looks like a reversed P
character (the pilcrow). The keyboard shortcut is Ctrl+Shft+8.
