You can't. They could. Ask them to use BCC

Because you have no control over someone else's email program, which
is what is formatting your info on the received message.

They have you set up as a contact, perhaps in Outlook. When you are set up as a contact in someone's e-mail the person usually fills out first & last name and e-mail, plus other things. For work the contact portion of Outlook contains all my contacts with name, company, phone, address, etc... When I choose my recipient I choose by name not by e-mail address. You may want to ask your sender to BCC you.
