How can I protect some of form fields in a document?

Don't you mean that you can NOT have a protected and an
unprotected cell in the same row? In Word 2000 you can
have protected and unprotected sections, but a document
can only be divided vertically into sections (i.e.
sections can only be on top of each other, not beside each
other). If one of the cells in a row contains a form
field and another does not, and if the row is protected,
you will be able to enter information only into the form
field. Merge fields sounds like it could work.
