How can I receive and grade high school assignments via email?

I would like to set a system that allows my high school students to send me
their assignments via email, that I can then grade and comment on and return
to them, again via email. I know sending to me with attachments is best, but
what is the best way for me to record their grade, and any
suggestions/comments/corrections I have on their electronic submission? How
should these assignments be saved (file set up?): one folder per class with
individual student folders, one folder per assignment with all classes in
that folder, one folder per class with one folder per assignment, etc? Is
there anyway to ensure their assignments are original and not a product of
cut-and-paste from the internet?

Rebecca,
This newsgroup is dedicated to questions/issues with MS Project, a
planning and scheduling application. I think you would have better luck
by posting to a newsgroup that perhaps deals with MS Outlook, MS Word,
or some other general Office application. MS Project isn't really set up
to do what you want.
