How can I see last email 'sent date' in my 'contacts' area?

You mean the date of the last message sent to a particular contact? Look on
the contact's Activities page.

Sorry, I did not make myself clear. I wish to see the date of the last sent
mail on the contacts screen where all the contacts are listed. What field do
I need to add?

There is no field you can add to do this. Outlook keeps no record of that
information associated with individual contacts.
