How can I view colour-coded appointments in Outlook Today?

I would like to be able to see my appointments colour coded when i view them
in Outlook Today.

I have labelled the appointment, but the colour is only present in the
calender, not the start up screen. Does anyone know how I can change this?

You'd have to write your own Outlook Today.
