How can I word wrap appointments in outlook?

You can't. If you want them to wrap in a printout, you need to use the
Calendar printing assistant (Outlook 2007).

richard, besides the calendar printing assistant, another option is
Wincalendar. This is a addin for MS office that converts it to Word/
Excel format (+ supports word wrap). Works pretty well, but it is not
free (is free to try),
