How change language in Word 2007 spell check???

I have recently upgarded from Office XP to Office 2007.

generally no problems except that I can not work out how to change the
default language in Word 2007.

For some reason my spell check has defaulted to US English but I want
it to spell check in UK English.

Any help appreciated.
