How do I add a list to a menu

About 20 minutes ago I learned of a "Work" menu item (on an XL ng) that
can be added to a toolbar through the "Tools->Customize-Commands"
function.
My question is, what's next? i.e. how to I populate the dropdown?
Blundered around in Help but couldn't find a reference to it.
