How do I add a second color to letters in Word Art?

I am completely unfamiliar with Word Art but am trying to muddle my way
through. Last night I stumbled upon a tool that allowed me to add a second
color to the letters of a word I was fiddling with but now I can't find it
and I have been unable to repeat the process.

Depends what you mean by "a second color." WordArt is an AutoShape (at least
in concept), so it has both a fill color and a line color, and these can be
different (and the line weight can also be varied). In addition, you can
also add a shadow, and its color can be different.

I suspect, however, that what you're talking about is a gradient blend, and
that would be on the Gradient tab of Fill Effects (which you can select by
clicking the arrow beside the Fill Color button and then choosing it from
the popup)

try right clicking on the wordart text and going to formatwordart then
dropdown the arrow next to color and choose fill effects.
