In the stencils that are provided with Visio when you double-click them a
text box appears below the stencil for you to type in, complete with a small
yellow tag that allows you to reposition the text around the stencil.

I have been trying to figure out how to do this with some stencils that I
have made myself for the last two hours and just can not figure it out!

Please help before I go insane.

Are you refering to the yellow diamond with a tooltip that says "Reposition
Text"?

If so, this is a Control Handle. Some Visio shapes have these built in to
allow easy text positioning. Adding one to your shape involves making some
changes in the Shapesheet. You can view the Shapesheet of a shape by
choosing Window > Show Shapesheet. In particular you need to insert a
Controls section. Take a look at the Shapesheet for a connector or other
shape with the control handle to see what formulas you must enter in the
section.
