How do I back up/import safe senders list in Outlook 2003?

My machine crashed, I have the pst files and such, but it appears as if all
my rules around junk email / safe senders was lost. How do I save that
information in the future (and import it in the event of a crash)?

you can export it from the junk senders dialog.

How do I automate the backup via a backup tool (like MS Backup)? I'd like to
add those files to my nightly backup process.

I don't believe you can, since it's not stored in a file on your computer.
