How do I change a shape but retain the text?

E.g., In cross functional flow diagram I want to replace a predifined process
shape with text in it with another shape whilst retaining the text.

Thanks Al, I was kind of hoping that Visio would have this functionality.
Unfortunately I can't use add ons due to coporate restraints.
