Hello,
For this requirement, you have to create a new stencil; then drag the shape with the required color into the stencil (which is
normally get into the edit mode); you may right click on the shape which present on the stencil and modify its properties
(name etc.); then save that stencil. Use that stencil for your future documents by opening that stencil.. (you may add the
path of the stencil to TOOLS - OPTIONS - ADVANCED - FILE PATHS - STENCILS also) [this path related to visio2003]

Hello,
I am drawing some diagrams with Visio and each time I have to select all
the shapes I drew, change the fill to "none" and change the color to
"black" so that I get simple black and white diagrams. Is there a way
to have it default like this?
