how do i change outlook note headings?

What happens when you open the note item and edit the first line? The
first line becomes the title in the other views.

I'm not sure....how to edit. When I open a note, it's all there. When I
close the note, the first line becomes the name of the note on the icon view.
It's when it prints that it does not become the heading. Print preview will
show the line with the word unknown.

Well, how did you create the note? You have to open it to edit it.
Just position the cursor at whatever point in the text that you want to
start editing.

When I looked at Print Preview of a note, the lines were as following in
the preview:

<myname>
<horizontalbar>
<modifieddate>
<2blanklines>
<allLinesOfNoteIncludingLine1>

If the line with "unknown" is the first one (which has your user name)
then I suspect that you did some tweaking or configuration with a 3rd
party tool to eliminate your name. I'd have to go digging in the
registry to find where the username string is specified for you to go
look to see what you have there, but there is no point if that is not
the line with "unknown" in it.
