How do I change stationary in an already created document?

I can't find how to change the stationary in an already created document. I
only know how to do that in a new document but when I am in that document and
want to change that stationary, it opens a new document.
Does anybody can help me?

That cannot be done. You need to create a new document with the desired
stationery, and then copy/paste the various Notes Containers into it.
