How do I change the color of the message subject text before sendi

....so that my message subject text appears in a different color in my
recipients inbox.

You can't -- the way the message subject looks in their inbox is entirely
dependent on their e-mail program and/or settings.

I am looking at my inbox and one of the messages shows up with red text in
all the fields displayed in the list. The message is also flagged. I have
received these messages from this same person before. How is it that the text
is red?

they probably set it to expire - unless you are using automatic formatting.
if outlook 2003, right click on the flag field and choose flag, clear - or
reminder... if it is a reminder create a rule for all mail from the person
to remove the flag.
